  • 2 eggs
  • 15 ml mayo
  • 2 spring onions
  • 5 ml miso paste
  • salt
  • (lime) pepper
  • 4 slices of bread
  • crispy chili oil
  • water
  • butter

    Heat some butter in a pan and once melted add the bread and toast on both sides.

    Beat the eggs and mix with the mayo, salt and pepper.

    Take the bread out and put the miso in the pan with a splash of water and mix the paste with the water.

    Cut the spring onions and mix with the miso and bake on medium heat for a few minutes.

    Add the eggs to the spring onions and slowly stir.
  6. 6
    Once it reaches the desired texture serve on the toast and top off with crispy chili oil.
