
Miso Spring Onion Breakfast Eggs

- 2 eggs
- 15 ml mayo
- 2 spring onions
- 5 ml miso paste
- salt
- (lime) pepper
- 4 slices of bread
- crispy chili oil
- water
- butter
- 1Heat some butter in a pan and once melted add the bread and toast on both sides.
- 2Beat the eggs and mix with the mayo, salt and pepper.
- 3Take the bread out and put the miso in the pan with a splash of water and mix the paste with the water.
- 4Cut the spring onions and mix with the miso and bake on medium heat for a few minutes.
- 5Add the eggs to the spring onions and slowly stir.
- 6Once it reaches the desired texture serve on the toast and top off with crispy chili oil.
