For the dough
- 200 g butter
- 350 g self-raising flour
- 200 g sugar
- 8 g vanilla sugar
- 1 egg
- 1/2 tl salt
For the filling
- 6 goud reinetten (Belle de Boskoop) apples
- 100 g raisins
- 50 g sugar
- 15 ml cinnamon
- 15 ml lemon juice
Optional
- 2 handful of panko
- whipped cream
- 1Mix the dough ingredients together until it forms one big ball. Start with a mixer and continue by hand if needed.
- 2Divide the dough into 3 smaller balls: one half, and two quarters. Place these in the fridge for an hour.
- 3Peel the apples and cut them into small cubes.
- 4Put the raisins into boiling water and leave to cool for 10 minutes.
- 5Mix all the ingredients for the filling together.
- 6Roll out the larger part of the dough until it is about 1 cm thick. Use the cake tin to measure and get the correct size for the bottom of the pie.
- 7Cover the inside of the cake tin with a little butter and add the rolled out dough to the bottom.
- 8Roll out one of the other parts of the dough also to 1 cm thick. Make slices big enough to cover the side of the cake tin.
- 9Add some panko on top of the dough in the cake tin to absorb moisture from the filling and keep the bottom crispy.
- 10Add the filling to the cake tin.
- 11Roll out the last bit of dough and make thin strips to add on top of the cake.
- 12Brush a little bit of egg on the top to get a beautiful brown colour after baking.
- 13Bake for 1 hour at 180 degrees Celsius.
- 14Serve optionally with whipped cream.
